Hidden Veggie Turkey Meatballs (Gluten Free, Grain Free)

Meatballs are the perfect way to hide all the veggies you want the kids to eat. In this recipe I used spinach and broccoli which become undetectable after blending them up. You can sub in whatever veggies you have on hand. If you use a more watery veggie like zucchini you may need a bit more flour to keep the consistency of the mixture.

Ground Turkey Hidden veggie meatballs
 2 16oz. Packages of ground turkey
 2 cups Packed with spinach
 2 cups Broccoli
 ½ Large onion
 3 Cloves of garlic
 2 Eggs
 ¾ cup Cassava Flour
 Salt and Pepper to taste

Preheat oven 350 degrees

Place all veggies in the blender, Spinach, broccoli, onion, garlic, then blend on high until blended very small

Add BBQ sauce, eggs and salt and pepper to blender then blend in high ( this will help break up the vegetables even more)

Then add the Cassava Flour to the blender and mix all together

Using a bowl put in both packages of meat then the entire blender mixture with all the veggies. Mix together with a spoon or hands.

Once the mixture is totally incorporated, use a tablespoon to grab equal size portions to make into balls and place on the baking sheet.

Once the baking sheet is full place in the oven for 30 minutes
