We eat healthy meals through out the week but like to have some treats on the weekends. Our families favorites are cookies so though lots of trial and error I have created these delicious gluten-free oatmeal chocolate chip cookies. We bake up a batch on Friday or Saturday and have them for the weekend. If there are any left over cookies on Sunday evening we put them in the freezer for the next weekend. The size of the cookie will determine the exact bake time. I make slightly larger cookies so that is the amount of time I do. These cookies don’t expand so the shape you put them in on the baking sheet is how they will bake. Hope you enjoy these cookies as much as we do!

Pre heat Oven to 350 Degrees
Line baking sheet with parchment paper
Make sure butter is soft and eggs are room temp
Combine the egg, butter, sugars and beat on medium speed until creamed and well combined
In a separate bowl mix together the dry ingredients including the oats, flour, baking soda and salt
Next slowly add all of dry mixture to the wet mixture on a low speed. Add the chocolate chips last
Form into equal size mounds then flatten a bit
Put baking sheets in the oven and wait for your delicious cookies!
