Healthy Chicken Tenders Gluten Free

Chicken tenders

 2 lbs Organic Chicken Tenders
 2 cups Cassava Flour
 1 cup Gluten Free Italian Bread Crumbs
 ½ cup Parmasean Cheese
 1 tbsp Salt
 1 tbsp Granulated Garlic
 1 tsp White Pepper
 1 tsp Black Pepper
 2 tbsp Italian Seasoning
 6 Eggs
 Organic Olive oil - as needed for pan sauté

On a large plate combine, flour, panko, parmesan cheese, salt, garlic, white and black pepper and Italian seasoning

In a bowl crack and beat all of the eggs together

Dip each piece of chicken first in the egg mixture then in the flour mixture

On a medium heat frying pan drizzle about 2 tbsps of olive oil on before placing the pieces of covered chicken tenders in the pan

Cover the pan and pan fry for 4 min each side or until internal temperature is 165 degrees

NOTE: This is a fairly large recipe, we like to have lots of extras. So for a smaller batch, just half this recipe.
